Chili 🫘 a comforting protein, fiber, and antioxidant-rich meal!

This is my go-to recipe when I’m not sure what to cook or I have lots of leftover veggies in my fridge that I can easily throw into this dish to make it super nutritious.

Ingredients

  • 1 pound lean ground beef
  • One onion diced
  • One jalapeno seeded and finely diced
  • Four cloves garlic minced
  • McCormick Chili mix low sodium
  • One green bell pepper seeded and diced
  • 14 ½ ounces crushed tomatoes canned or fresh
  • 12 ounces of kidney beans canned, drained & rinsed
  • One can of corn
  • One tablespoon tomato paste
  • salt and pepper to taste

Directions

  • Combine ground beef and 1 ½ tablespoons chili powder.
  • In a pot, brown ground beef, onion, jalapeno, and garlic. Drain any fat.
  • Add the remaining ingredients and bring to a boil.
  • Reduce heat and simmer uncovered for 5.  45-60 minutes or until chili has reached the desired thickness.
  • Top with cheddar cheese, sour cream, green onions, cilantro, or other favorite toppings.
  •  Eat it over pasta, just as is,  or dip in tortilla chips and enjoy!
