I’ve got a Unami craving and I know just what to do with it – cook up some street food noodle soup 🍜

Unami’s unique taste is primarily due to the presence of glutamates, which are found in various ingredients like soy sauce, mushrooms, and broths. Umami not only adds depth and richness to food but also enhances the overall flavor profile, making each bite more satisfying.

In dishes like my absolute favorite Janchi Gooksu, umami creates a complex and harmonious blend of flavors, transforming simple ingredients into a culinary delight. It’s this distinctive taste that makes umami-rich foods a go-to for satisfying deep, savory cravings!

Ingredients

  • Anchovy Dashi Pack for soup base. https://amzn.to/47QGc9b
  • Soy sauce
  • Black pepper
  • Salt to taste
  • Somen Noodles https://amzn.to/3Nm3AmF
  • Chives
  • Zucchini diced
  • Bok choy
  • Cabbage sliced
  • Any vegetables in the fridge

Directions

  • Boil 5 cups of water with the dashi pack
  • Add 2 TBSP soy sauce
  • Salt to taste
  • 1 tsp black pepper
  • Add the vegetables after 10 minutes of simmering.
  • Begin to cook the noodles 3-4 minutes
  • Rinse the noodles in cold water and set aside
  • Place the noodles in a bowl and add the broth with vegetables and enjoy with kimchee!
