Umami Kimchi Stew

This is one of my FAVORITE comfort dishes and is FULL of nutrients (so it does not have to be a guilty pleasure!)

Umami Kimchi Stew

Ingredients

  • 1 cup ripe kimchi napa preferred
  • 1 cup tofu
  • 1 cup soybean sprouts
  • 1 TBSP gochujang
  • 1 tsp gochugaru chili powder - optional spicy
  • Dashi pack https://amzn.to/3Ysxr1c
  • 1 TBSP soy sauce
  • 1 serving Japchae noodles https://amzn.to/3rXeCH3

Directions

  • Boil 3 cups of water with a Dashi pack and simmer for 10 min on low heat
  • Add gochujang, kimchi, and soybean sprouts
  • Add japchae noodles
  • Bring to a boil and simmer for 5 minutes
  • Add soy sauce
  • Add tofu and continue to simmer for 3 minutes
  • Serve hot and enjoy!
