Using a cheesecloth, squeeze the water out of the tofu and place in a bowl.
Beat three eggs and add to the bowl.
Chop bean sprouts and sesame leaves and place in the bowl.
Add 1 tsp salt and pepper to the bowl
Mix well.
On a frying pan, add oil on medium-low heat, and using a ladle, pack the contents and place on the pan, and cook for 2-3 min on each side.
Enjoy with soy sauce or without!
