Tofu Fritters

Who’s is ready to enjoy gut friendly tofu fritters?

Sesame leaves are a common ingredient in Korean ingredients and I LOVE to use them in my meals!  This meal is egg and tofu heavy, so these fritters are full of protein. Let’s dive into tofu and why is it good for you and your gut health :egg:

Tofu is a great source of plant-based protein. Protein is essential for cell growth, repair, and maintenance – crucial for our body. Tofu is also a rich source of digestive enzymes, such as lipases and proteases, which can help the breakdown and absorption of nutrients. These enzymes can support digestive health and improve nutrient availability :raised_hands::skin-tone-3:

Tofu Fritters

Ingredients

  • 1 pack firm organic tofu
  • ½ cup chopped sesame leaves
  • 3 eggs
  • ½ cup chopped bean sprouts
  • 1 tsp. salt and pepper
  • Avocado oil

Directions

  • Using a cheesecloth, squeeze the water out of the tofu and place in a bowl.
  • Beat three eggs and add to the bowl.
  • Chop bean sprouts and sesame leaves and place in the bowl.
  • Add 1 tsp salt and pepper to the bowl
  • Mix well.
  • On a frying pan, add oil on medium-low heat, and using a ladle, pack the contents and place on the pan, and cook for 2-3 min on each side.
  • Enjoy with soy sauce or without!
